Basil Salmon and Broccoli Cheddar Risotto

What's for dinner? Salmon seasoned in basil and cooked in garlic, butter, and lemon juice, served with Lundberg gluten-free broccoli cheddar risotto.

What you'll need:
  • 1 piece of salmon, 4-6 oz
  • 1 tablespoon butter
  • 1-2 teaspoons of crushed or minced garlic, depending on your taste preference
  • 2 tablespoons of lemon juice
  • 1-2 teaspoons of crushed flake basil
  • 1 box Lundberg Cheddar Broccoli Risotto
  • 2 cups water
  • 1/4 cup milk
  • 1/2 tbsp olive oil
What to do:
Cooking the salmon
  1. Rinse the salmon in water, season it with salt and pepper (I seasoned mine, and actually, I season all fish and meat with Goya's Adobo), sprinkle ~1 tsp lemon juice over the salmon, rub 1/2 tsp of basil into the fish
  2. Place the butter in a skillet on medium heat, when the butter has started to melt enough to spread over the skillet...add the garlic
  3. Once all of the butter has melted, sprinkle the skillet with 1/2 tsp of basil
  4. Place the salmon (skin up) in the skillet, pour 2 tsp of lemon juice over the salmon, and sprinkle 1/2 tsp basil over the skin side of the salmon
  5. Cook (skin up) side for 10 minutes, when flipping to the other side add another tsp lemon juice to the pan (the flipped fish should have a nice brown crust on it at this point)

  6. 6. 2 or 3 mins after the flip, pour another tsp of lemon juice over the top of the fish, and sprinkle another 1/2 tsp of basil over the fish, let the salmon cook for the remaining 7-8 minutes



Cooking the risotto
  1. Sauté rice with ½ tbsp olive oil in a 2-qt heavy saucepan over medium heat
  2. Add 2 cups of water and ½ cup milk, and contents of seasoning pouch, stirring well to blend seasonings.
  3. Heat to boil. Reduce heat to simmer. Do not cover. Cook 20 minutes, stirring occasionally. Serve piping hot.
